Product Description
The coastal influence and cool morning fog unique to Monterey County is ideal for growing Chardonnay grapes. Early bud break and a later harvest allow the grapes to develop a crisp, bright acidity and lush tropical flavors. The grapes were harvested at night and in the early morning to keep the fruit cool. The must was bladder pressed to extract gentle flavor from the fruit and then kept cool for barrel fermentation to retain its delicate aromatics. Half of the wine underwent malolactic fermentation to add depth and richness. The wine was aged sur lie in medium toast American oak barrels providing structured balance and a generous mouthfeel.
